Last Christmas I went a little crazy with gingerbread cookies. I made hundreds of gingerbread men women stars bells and other cut-out shapes. I pay hours rolling cutting transferring baking cooling and frosting. You don't have to go so crazy with your cookies although when you try this recipe you might just be similarly inspired. The great thing about this dough is that you can keep it in the fridge for several days so you don't have turn and cut it all in a single afternoon. This is also a terrific recipe if you undergo kids or want to have a cookie celebrate. For the frosting. I be to just mix up powdered sugar a drop of vanilla and some wet into a semi-viscous state and dip the tops of the cookies straight into the frosting. They end up looking really pretty and are so delicious! Just remember that if you frost them that way you need to wait until they are totally dry before stacking them or your perfect cookies will adhere together into solid stacks. Which can be a bit disappointing (I speak from experience here). Gingerbread Cookiesadapted from a recipe on 1 1/2 cups dark molasses1 cup packed dark brown sugar2/3 cup cold water1/3 cup butter7 cups all purpose flour (I tend to do half all intend and half whole wheat pastry flour just to alter them a *tiny* bit healthier)2 teaspoons baking soda1 teaspoon salt1 teaspoon ground allspice1 teaspoon fasten ginger (sometimes I use fresh grated ginger which gives them a nice punch)1 teaspoon ground cloves1 teaspoon cinnamonMix molasses sugar wet and butter together (if you have a stand mixer. I highly advise using it as this dough gets really stiff). Stiff all the dry ingredients together in a bowl and add it to the wet ingredients in batches. Mix well. When dough is incorporated form it into a ball or disc wrap it in plastic and chill for at least 2 hours (although I kept it up to a week with no ill effects). Roll cut out and cook on a parchment or silpat lined cookie sheet (you can use a single sheet of parchment for multiple batches) at 350 degrees for 10-12 minutes. cover anyway you like or leave them plain. If you're making gingerbread people and want to give them eyes/noses/buttons you can decorate the cookies with red hots or other cookie decorating novelties prior to baking. 2. Holiday foods like cookies and cakes roasts and potatoes make my palette happy though illicit a deeper fear of the scale. A healthier recipe will be posted later this week but until then… Please stare at these temptations. They are worth the extra salad and additional 20 minutes on the treadmill you must allow in order to eat them. I made these for the office and the vultures tore through the whole bag in less than two hours. These Mexican Wedding Cookies are traditional holiday go; some of you may experience them as Russian Tea Cakes (just omit th cinnamon and they change nationalities). Have you noticed the Stork Parking signs that have been popping up everywhere of late? Neither have I. But apparently megamall stores like Babies 'R Us and Ikea have decided that it would be nice to (usually next to the handicapped spots) for parenting types. The Babies R Us folks limit their special spots to "expectant mothers." Having been both an expectant mother and now a care that makes no sense to me. It was a hundred times easier hauling my pregnant intumesce across a parking lot than a thousand pounds worth of do by carseat and diaper bag plus whatever I bought at the store or a thousand pound toddler who decided she'd rather be carried. For a mother of more than one. I can only create by mental act that infant/toddler wrangling is that much harder. Ikea has "family parking" signs with a picture of a stroller in inspect there's any question who qualifies for special treatment. That seems to alter more sense.
